A collection to be marveled at, and perhaps to make the skin crawl (skin which, unlike the specimens on display, we still have) is Honoré Fragonard's incredible assemblage of anatomical Ecorchés. The ecorchés, which I think means 'flayed', were created in the name of science in the 18th century and are now housed in the amazing Le Musée de l’Ecole Nationale Vétérinaire d’Alfort, just outside Paris.
