Charles Ranhofer (1836-1899) was the chef at the famous Delmonico's Restaurant in New York from 1862 to 1876 and 1879 to 1896, and author of this encyclopedic cookbook. Circular stamp of the Societe Culinaire Philanthropique de New York on the preface leaf. Condition: Some wear to the original leather spine and front panel, endpapers renewed; a bit of browning to pages; very good.
